Salvia officinalis Perennial This sage is a culinary, large-leaved variety. Used both dried and fresh, sage leaves are a popular poultry and meat seasoning. Sage also makes a soothing tea. The leaves and branches are often used in crafts such as wreaths. Soil & Water: Sage prefers well-drained, moderately rich soil with plenty of added organic matter. Provide light afternoon shade in warmer climates. It requires a minimum of water once established. Hardy in zones 4-8. Planting & Growing: Start seeds indoors 6-8 weeks before the last frost, lightly pinching developing plants to encourage bushiness. Sage makes a good companion plant, especially for rosemary, cabbage, and carrots; sage deters cabbage moth. Harvesting & Storage: Harvest leaves when the plant is large enough. Use leaves fresh, or dry and store leaves in an airtight container. Sage also keeps well frozen. Did You Know? While a sage plant is in its prime, it makes an attractive addition to both herb gardens and ornamental borders. Pruning after flowering will keep the plant from getting to leggy or woody.
